Fruit Popsicles and Mug Cake

Since I was trying to eat healthy food, I have been depriving myself from eating desserts. Good thing I found popsicle trays at Daiso.  I got this urge to immediately use it. As a start, I made fruit popsicles.

This is fairly easy. I bought watermelon, avocado and mango. I chopped the fruits finely and layer them.

I also made popsicle made with purely mangoes.

I guess fruits are good for the heart.

My 21-day No Junk Food Challenge ended on Valentine’s day. I wanted to try this mug cake recipe.

Preparation time is less than 5 minutes and you only need to microwave it for 70 seconds.   This is how it looks inside the mug.

I removed the caked from the mug and did something with the presentation.

It is actually good. Can you see the lizard keeping an eye on the chocolate cake?

True to its name, it is really moist.

I want to try other mug cake recipes!

How I Tried to Eat Healthy… and Failed Sometimes

I quit drinking coke the day after my birthday in 2014.  I think I am quite successful with it since I get comments from my friends that I lost weight.  I noticed that when I watch what I eat, I lose weight faster.  So I try to eat as healthy as possible.  To be able to have control over what I eat, I need to prepare and cook my meals.

I made some effort to cook and prepare healthier alternatives to our usual fatty meals and sugar-rich desserts and snacks.

I saw this on instagram and I wanted to try it myself.

Not your usual egg and french fries.

Not your usual egg and french fries.

That is half a peach, yogurt and sliced apple.  I discovered that an apple dipped in yogurt is delicious.

Since I still have that yogurt, another alternative to the “fries and eggs” would those cakes in a jar. I prepared my fruits.  I was thinking of layering them like a parfait. I have the cooked oats to replace the cake, yogurt for the cream and the fruits.

I used a mayonnaise jar.  (There are a lot of mason jars being sold in stores. You can use those, too.)

I should have cut  the fruits into smaller pieces to make the layers more define. I  still have excess ingredients that did not fit in the jar.  They went to the bowl for instant gratification.

I did not use sugar so it tasted bland but the mango and apple are sweet so it was okay for me.  My aunt has a different opinion.  Hahaha She did not like it.  It was not for her anyway.

The pope was in the country and my aunts were glued to the TV so I volunteered to prepare one meal for them. I wanted try cooking the fish tinola (fish soup) I had  like what I have tasted in a shrimp place we tried.

On the lower left is pan-fried seafood tofu. It was sold frozen in one fish store in the city. On the lower right is bacalao sauteed in oil and garlic. It was sold in jar from the same fish store I bought the tofu from. Bacalao is a type of fish which then dried and placed in a jar like sardines. I also bought the tuna I used for the fish tinola from the same store.

Since I still have yogurt, I mixed  cubed peaches and froze it.   I unmolded the  frozen yogurt into the plate and garnished it with sliced peaches.

I am trying to eat healthy because of this 21-day challenge.

However, I received  a message from a childhood friend whom I have not seen in a long time that she would be sending me goodies she made through her brother. Of course, I will not refuse that wonderful gesture of friendship.  I got leche flan, ham and cheese puto and brownies.

After devouring the food, I am back to Day 1 of the 21-day no junkfood challege. Good thing, my uncle came and brought me guavas.

I think it is okay to take a break from dieting and enjoy life’s simple pleasures like a thoughtful gesture from a friend.

Homecooked Gourmet Meal

My cousin came to visit us over the weekend. It has been a while since she came home to visit us so I was excited with the idea of her spending the weekend with us. Some of my weekend plans got shortened to make time for her. She arrived on a Saturday afternoon. Immediately after she arrived that afternoon, we went to the grocery to buy stuff she is going to cook for us over while she is on vacation. I know what you are thinking now. She is supposed to be on vacation yet we are letting her cook for us. She loves to cook for us so why deprive her of what she loves to do? Aren’t we lucky?

This is the tuna pesto pasta she cooked for us during the lunch that day after she arrived. (She cooked for us chicken and soup the night before but I forgot to take a picture.)

I would have shared the recipe but I let her do her thing and did not hover while she cooked. I took advantage of her being around and just chilled waiting for the cooked dish.

Judging by the empty plate after our lunch, I think my picky aunt loved the pasta. That is a huge deal because my aunt is the type who is not fond of trying a new dish.  And she is very transparent when she does not like the food. She could not hide that little smirk when she does not like something. Ha! She truly loved the food this time. Maybe my cousin should come visit us often.

It occurred to me that my cousin would have loved to receive gourmet baskets for Christmas. I remember seeing from Giftsbunker some stuff she might be interested in. Nowadays, it is easier to order something online than choosing the items from the mall. Compared to the hassle of driving through traffic, surfing online is a much easier option. If you search the right website, you also get discounted coupons to save on your purchases. It is a good deal because you get to save time and money!

Overnight Oats and Salad Wrap

I have been chatting with a friend and she mentioned she was making overnight oats.  We had oats in the fridge and I wanted to make one, too.  Overnight oats are oats soaked in liquid and kept in the fridge overnight.  Yes, you eat the oats in the morning. No cooking necessary. The recipe I found calls for rolled oats but what I had was instant oats so I used the instant oats. What I did was soak the oats in low-fat milk and yogurt.  I just eyeballed the proportion of the oats with the milk-yogurt mixture.  I added a pinch of cinnamon just because I have cinnamon in the fridge.

This is what it looked like after being soaked overnight.

You can scoop this to your bowl and add fruits. In my case, I added banana, mango and raisins.

Hmm.. something is missing. I added Twinkles. 😀 Twinkles is a fruit-flavored cereal made of oats.

Try this! You can experiment with other toppings for the oats.

My food experiment did not end there. I bought a pack of tortilla wrap in Malaysia. We were in the grocery and I wanted to use up my ringgits. I did not want to be bothered into exchanging them to peso. My friend bought packs of tortilla wrap so I bought one, too.

The wrap is going to expire next week so it was crunch time for me to make something with it. I heated the wrap on the pan following the instructions on the package. I gathered my ingredients. I choose fruits and vegetable that I like to eat. I got lettuce, carrots, green tomatoes, apple, mango, avocado. I cut them in julienne slices, arranged them on the wrap, topped with cheese and drizzled with store-bought caesar dressing and cheez whiz. Then, I wrapped it.

My uncle and one aunt loved it. The other other aunt looked like she was forced to eat it. She is not really adventurous with food so we already anticipated that reaction from her.

There were four of us in the house so I made only four wraps.

There are leftover ingredients so I made salad the next day. I still have four wraps left which I am using for another food experiment this weekend.

If you can’t find tortilla in your grocery shelves, you can make the wraps in your own kitchen. I found the recipe here. I will test this recipe soon.

Happy weekend!
